Sudden decrease in Bulgarian wine exports to Russia

Bulgarian wine exports to Russia have marked a considerable decrease. In the words of Krasimir Koev, head of Bulgaria’s Execute Agency on Vine and Wine (EAVW), the main reasons are the tragic events in Ukraine as well as the devaluation of the Russian ruble, as reported by the Argumenti Nedeli daily. Effect of commercial grape extracts on the cheese-making properties of milk.

Grape extracts can be added to milk to produce cheese with a high concentration of polyphenols. Four commercial extracts from whole grape, grape seed, and grape skin (2 extracts) were characterized and added to milk at concentrations of 0, 0.1, 0.2, and 0.3% (wt/vol). The effect of grape extracts on the kinetics of milk clotting, milk gel texture, and syneresis were determined, and model cheeses were produced. Whole grape and grape seed extracts contained a similar concentration of polyphenolic compounds and about twice the amount found in grape skin extracts.

Oak barrels have long been the preferred method for oak maturation of wine, but barrels contribute significantly to production costs, so alternate oak maturation regimens have been introduced, particularly for wines at lower price points. Marketers need to take on new consumer trends and adapt to a changing market, according to a new Wine Intelligence study released today. The Wine Intelligence Global Consumer Trends report has spotted nine trends among alcohol consumers, each with different implications for the drinks industry. “We’re focusing on what’s happening already, sometimes at the fringes of consumer behaviour, sometimes nearer the mainstream,” explains Lulie Halstead, Wine Intelligence chief executive offier. AIMS:This study examined yeast strain effects in a novelwine making process that had been designed to optimise phenolics extraction and improve production efficiency for Pinot noirwine making.METHODS AND RESULTS:Microwave maceration with early pressing and co-inoculation of yeast and malolactic bacteria for simultaneous alcoholic and malolactic fermentation was investigated. Yeast treatments (Saccharomyces cervisiae RC212 and EC1118, and Saccharomyces bayanus AWRI1176) were co-inoculated with Oenococcus oeni PN4 immediately after must microwave maceration.
